Tagliatelle alla Turkey

Yes, another pasta dish. Can you tell I love every and all kinds of pasta?

This is one of my favourite recipes because, similar to the Seafood Fettuccine, it doesn’t require a jar of sauce. Instead, you create your own savoury sauce out of carrots, onion and tomato.

The sauce base is easy — just chop up these three ingredients and let it sizzle into a sauce while you cook the pasta. Cook the ground turkey in the sauce pan and, when the pasta is cooked, mix everything together.

When you add that final sprinkling of parmesan cheese, the servings look as delicious as they taste. Plus, we like to make garlic bread (either Ace Bakery brand or the Longo’s brand) to accompany this dish.

Because the only thing better than a plate of pasta is one served with garlic bread. Am I right?

Prep time | 15 mins.
Cook time | 20 mins.
Serves | 2-4 people

INGREDIENTS

  • 1/2 box of tagliatelle
  • 3 large carrots, peeled and diced
  • 1/4 cup of onion
  • 1 tomato, diced
  • 1 lb ground turkey
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp crushed red pepper flakes
  • 1/3 cup of parmesan cheese

INSTRUCTIONS

  1. Boil water for the pasta.
  2. Peel and dice the carrots into quarter of a dime-sized pieces. Chop the onion and the tomato.
  3. In a large pan, drizzle olive oil and adjust the heat to high. Add the carrots, onion and tomato to the pan and let sizzle. Once it’s sizzling, bring the temperature down to medium. Add salt and pepper.
  4. The water should be boiling by now. Add a pinch of salt to the water and add the tagliatelle. Cook for about 10 minutes. If you like the pasta a bit firm (al dente), cook for less time. If you like pasta softer, cook for 10 minutes, or longer, if you prefer.
  5. Add the turkey to the large pan and cook it with the carrots, onion and tomato. Add the crushed red pepper flakes.
  6. When the pasta is ready, drain it from the pot and add it to the large pan with turkey and vegetables. Mix until it’s all well combined.
  7. Sprinkle parmesan cheese on top of the pasta. Enjoy with a fine glass of red wine!
