Spinach Tagliatelle


Have you ever seen green pasta and wondered what it was?

Well, it was likely spinach pasta. It might look different than any regular white pasta you’ve eaten before, but to be honest, the difference in taste is pretty subtle.

But to accentuate the spinach taste (because I love spinach), I cooked some baby spinach in this dish, which served as a tasty, healthy ingredient.

Like several of my other pasta dishes, I also didn’t use any jarred sauce. Instead, I drizzled some olive oil in the pan along with butter, white onions and diced tomatoes to create a flavourful base.

With the spicy Italian sausage and crushed red pepper, there’s a nice kick to this recipe that puts it over the top. And, of course, parmesan cheese. You can never forget parmesan cheese on any pasta dish — spinach or otherwise.

Yields | 2-4 servings

INGREDIENTS

  • Olive oil, drizzled
  • 3 tbsp butter
  • 1/3 cup white onion, chopped
  • 1/2 cup tomatoes, diced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp crushed red pepper
  • 1/2 bag of spinach tagliatelle (about 8 nests)
  • 2 spicy Italian sausages, chopped
  • 1/2 large container of baby spinach
  • 3 tbsp parmesan cheese, grated

INSTRUCTIONS

  1. Boil a large pot of water for the pasta.
  2. In a large pan on medium-high heat, drizzle olive and add the butter. Dice the white onion and tomatoes. Once the butter has melted, add the onion and tomatoes. Add salt, pepper and crushed red pepper. Let it all simmer together.
  3. Cut up the sausages and add them to the pan with onion and tomatoes.
  4. When the pot of water is boiling, add the spinach tagliatelle. Let it cook for about 8-10 minutes, or until the pasta is cooked to the way you like it.
  5. Once the sausage is browned, add the spinach to the pan. Mix the spinach with the sausages and vegetable base. The spinach should shrivel up, and it should take about 3-5 minutes to cook.
  6. When the tagliatelle is done, strain the water and add the pasta to the large pan with the sausage, spinach and vegetable base. Mix everything together. If you find the pasta is a bit dry, add some more olive oil and continue mixing.
  7. Sprinkle parmesan cheese to the pasta mixture and begin plating it. Sprinkle more parmesan cheese to each plate if you’d like.
  8. Enjoy with a fine glass of red wine!
