Shrimp Fried Rice


When you can’t have your favourite shrimp fried rice in a restaurant, then you’ll have to make it.

This was the case for me. During quarantine, I began missing some of my favourite restaurant dishes. One of those being the shrimp fried rice at Toronto restaurant Lee Chen.

Craving the dish, I began browsing recipes online and discovered that the popular meal isn’t all that difficult to make. We already had the required ingredients and the steps seemed as simple as any other stir fry.

The result: an easy recipe that was filling and flavourful. Although I’ll still treat myself to Lee Chen upon the reopening of restaurants, I was glad to add this delicious dinner idea to my collection of recipes.

Serves | 2-4 people

INGREDIENTS

  • 1 cup of arborio white rice (I use the Scotti brand)
  • 1/4 cup of white onion, diced
  • 3 large carrots, peeled and diced
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup of green peas
  • 3 large eggs, whisked
  • 1 lb shrimp, peeled and chopped
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp paprika
  • 1 tbsp cayenne pepper

INSTRUCTIONS

  1. Start boiling a pot of water for the rice.
  2. Once the water is boiled, add the rice and cook for 10 minutes.
  3. Chop the onion and carrots. In a large pan, drizzle olive oil and heat to medium-high. Add the onion and carrots to the large pan so they can begin to sizzle. Add salt and pepper.
  4. Crack the eggs and whisk them. Push the onion and carrots to one side of the pan, then put the whisked egg in the empty half of the pan. Once the egg begins to cook, break it apart with a spatula as if you were making scrambled eggs. The end result will yield small bits of scrambled eggs scattered in the onion and carrots.
  5. In a large pan, drizzle olive oil and add the shrimp to the pan. Once the shrimp becomes pink, add salt, pepper, paprika and cayenne pepper. Cook until pink/orange in colour. Once cooked, set aside in a bowl (cover to keep warm).
  6. Once the rice is almost ready, add the peas to the pot (or add the peas in a new pot of boiling water) and let cook for two minutes.
  7. Drain the water from the pot(s) and add the rice and peas to the pan with onion, carrots and egg. Mix all together until well combined.
  8. Add the cooked shrimp to the pan and mix everything together. If you’d like it spicier, add more cayenne pepper.
  9. Plate the shrimp fried rice and enjoy!
