Lemon-Soaked Salmon


Lemon-soaked salmon on a bed of vegetables can be a delicious summer dinner.

To ensure the lemon flavour is imbued in each piece of fish, I like to marinate it a few hours before cooking, even as early as the morning before leaving for work. I drizzle oil on the two pieces of salmon for moisture and squeeze a half lemon a per piece.

When it’s time to cook them in the oven, I leave two small slices of lemon on top of each piece to further soak the fish with the zesty flavour.

It’s not just simple and delicious but it’s also a healthy option, so you can feel good after chowing down.


Prep time | 10 mins.
Cook time | 20 mins.
Serves | 2 people

INGREDIENTS 

  • 2 salmon filets 
  • 2 lemons
  • Mixed vegetables (chop and mix your preferred vegetables)
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tbsp red crushed pepper
  • 1 tbsp cayenne pepper (if you like extra spice, like I do!)

INSTRUCTIONS

  1. Preheat the oven to 350°F.
  2. Marinate the salmon filets with olive oil, salt, pepper and squeeze lemon on them. (You can cut half the lemon in small slices and place them on the filets if you’d like). 
  3. When the oven is ready, put the salmon filets in the oven for 20 minutes. 
  4. If you’re using fresh vegetables, start chopping them up. 
  5. Drizzle olive oil into a large pan and add the vegetables to cook. Add salt, pepper and crushed red pepper (and cayenne pepper if you want it spicy) to the vegetables. 
  6. Plate the salmon and vegetables. Enjoy with a chilled white wine!
