I don’t know about you, but sometimes I get really tired of cooking and eating chicken.
But the great thing about a simple dish like chicken is…you can dress it up a bit to make it into something new. This lemon-Dijon marinade is exactly that.
With some lemon zest, lemon juice, Dijon mustard and some basic salt, pepper, cayenne, garlic powder ingredients, you have a newly flavourful lunch or dinner.
Let it marinate for at least 30 minutes (though the longer the marinade, the juicier it will be) and then cook it in the oven for just half an hour. Base your baking sheet with olive oil, fragrant rosemary and onion slices to elevate the taste (and aroma) of this dish.
We paired it with a simple broccoli cheddar rice, but any simple salad or vegetable mix will complement this recipe perfectly.

INGREDIENTS
- 2 chicken breasts or boneless thighs
- 1 tsp lemon zest
- 3 tbsp lemon juice, freshly squeezed
- 2 tbsp Dijon mustard
- 1/2 tsp garlic powder
- 1 tsp salt
- 1 tsp pepper
- 1 tsp cayenne pepper
- 2 tbsp olive oil, drizzled
- 1/2 onion, sliced
- 3 sprigs of rosemary
INSTRUCTIONS
- In a bowl, add the lemon zest, lemon juice, Dijon mustard, garlic powder, salt, pepper and cayenne pepper. Mix until well combined.
- Pour the mix into a large reusable bag, then add the chicken to the bag. Seal the bag and mix the marinade with the chicken before refrigerating it. Let it marinade for at least 30 minutes and up until 4 hours.
- When the marinade time is almost done, preheat the oven to 425°F.
- Prep your baking pan. Wrap the pan in foil. Drizzle the foiled pan with olive oil before adding the slices of onion and sprigs of rosemary.
- Add the chicken to the pan and brush them once more with the marinade.
- The chicken will take 30 minutes to cook, but take it out after 10 minutes to brush it with the leftover marinade, then again after 20 minutes to brush it for the last time with the marinade. This will elevate the tenderness and flavour of the chicken.
- At 30 minutes, cut into the middle of the chicken to ensure it’s cooked.
- Serve the chicken with your choice of side and enjoy while hot!
