This tried-and-true dish is made even better when you toss it between two buns.
Not only does it make for a more casual lunch or dinner, but the bread soaks up the tomato sauce in a delectable way. The seasoned breadcrumbs, melted mozzarella and tender chicken fuse together perfectly. Plus, you can add a side of your choice — salad, cooked spinach or even fries.

INGREDIENTS
- 2 chicken breasts
- 2 hamburger buns
- 1/2 cup of mozzarella, shredded
- 1/2 cup of tomato sauce
- 1/4 cup of breadcrumbs
- 1 egg
- 2 tsp salt
- 2 tsp pepper
INSTRUCTIONS
- Pre-heat the oven to 325°F.
- Prepare a flat surface with breadcrumbs. Wisk 1 egg in a bowl. Start breading the chicken breasts.
- First, dunk the chicken breast in the bowl of egg yolk, then mix it in some breadcrumbs until the breadcrumbs stick to the chicken breast. Do this to all the chicken breasts.
- Drizzle olive oil in a large pan and set to high. Once the pan is ready, add the chicken breasts to the pan.
- Sear each side of the chicken breasts until golden brown (appx. 2 mins). Once both sides are seared, set aside in an oven tray. (Add foil to the pan and put the chicken on top of the foil.)
- Add tomato sauce to the top of each chicken breast.
- Thinly slice the mozzarella ball. Add the thin slices on top of each chicken breast – on top of the tomato sauce.
- Once the oven is ready, put the chicken breasts in the oven. Cook for 10 mins. (Leave in the oven if the cheese is not fully melted.)
- While the chicken is in the oven, cook the vegetables in a large pan.
- Once the chicken and vegetables are done, place your chicken parmesan in the bun and enjoy while hot!
