Tomato Bruschetta


This is a simply delicious snack that people can rarely turn down.

Bread and tomatoes — is there a better combination? Bruschetta has been one of my favourite choice of appetizers for as long as I can remember.

The olive oil-drenched bread topped with diced tomatoes is a guaranteed recipe with which you can happily greet guests.

Or, if for yourself, makes for a tasty afternoon snack you don’t have to share.


Prep time | 10 mins.
Cook time | 10 mins.
Yields | 10-20 pieces 

INGREDIENTS 

  • 1 tomato, diced
  • 1 clove of garlic, minced
  • 1 loaf of bread (either large round loaf or a long, slim loaf will work)
  • Olive oil, drizzled

INSTRUCTIONS

  1. Preheat the oven to 350°F.
  2. Cut the loaf of bread into pieces about 1-inch thick (10-20 pieces).
  3. Brush olive oil on the tops of the pieces. Put the bread on a baking sheet (with tin foil).
  4. When the oven is ready, put the bread in for 10 minutes, until golden brown.
  5. Dice 1 tomato and add it to a heated pan. 
  6. Cook the tomatoes for about 5 minutes until soft, not mushy.
  7. When the bread is done, rub the clove of garlic on the top of each piece of bread.
  8. Add the tomatoes to each piece of bread and enjoy while warm!
