No barbecue? No problem. You can get a perfectly juicy steak with these simple steps.
If you haven’t tried cooking tenderloin this way, now’s your chance. By first searing the meat on a cast iron (distinctive grill marks are a must) then transferring it to the oven to cook, your tenderloin will come out tender to the touch.
Bonus: the whole process only takes about 10 minutes. The additional time allotted to this recipe is for making the cold pasta salad. Boiling the pasta takes about 10 minutes then, once the pasta is cooled, you simply add your chopped vegetables to the pasta and refrigerate until the steaks are ready.
Cold pasta salad is a classic side for these juicy beef tenderloins. It’s an unbeatable combination for a perfect summer meal!

INGREDIENTS
- 2 beef tenderloin steaks
- Olive oil, drizzled
- 2 tbsp of Montreal steak spice (1 tbsp per steak)
- 1/4 green pepper, chopped
- 4 green onions, chopped
- 1/4 cup sun-dried tomatoes
- 4 tbsp feta cheese
- 1/4 cup olive oil
INSTRUCTIONS
- Marinate the beef tenderloins with olive oil, salt, pepper and rosemary for at least 2 hours before cooking. You can marinate them overnight for extra flavour.
- Preheat the oven to 450°F and make sure the oven is pre-heated before you start searing the steaks on the stove (this part only takes a few minutes).
- While the oven is pre-heating, make the pasta salad. Start by cooking the pasta (you can use penne or fusilli) for about 10-15 minutes, depending if you like your pasta al dente (firm) or a bit softer. You can also refrigerate the pasta a bit to help it cool.
- Strain the pasta when it’s done and let it cool in a bowl. While it’s cooling, chop up your green pepper, green onion and get your sun-dried tomatoes and feta ready.
- Once the pasta is cooled, add the olive oil, feta cheese and vegetables to the pasta and start mixing. Once all mixed, keep the pasta salad refrigerated until the tenderloins are ready.
- When the oven is pre-heated, start searing the beef tenderloins in a cast iron pan (or a large pan). Sear each side of the tenderloins for 2 minutes.
- Once each side is seared, leave the tenderloins in the cast iron pan and put the pan in the oven for 5 minutes. Cook to your preference — 5 minutes will cook the tenderloins to medium.
It also depends on the thickness of the steaks. The thicker the steak, the longer it will take to cook to medium/medium-well.
