If you like a good omelette to start your day, this baked frittata is something worth trying.
I used mushrooms, cherry tomatoes and spinach to create this quick and easy dish. If you’d like to add some cheesy goodness to it, I’d suggest 1-2 cups of shredded cheddar cheese.
And if you’re looking to add more protein to your breakfast, you can also add diced sausage or ham to make it more filling. It’s as simple as making an omelette in the morning, except instead of frying it in a pan, you’ll bake it in the oven for just 30 minutes.

INGREDIENTS
- 1 container of spinach
- 1/2 cup mushrooms, diced
- 8 cherry tomatoes, diced
- 6 large eggs
- 1 tsp salt
- 1 tsp pepper
Optional:
- 1-2 cups of cheddar cheese, shredded
- 1 sausage, chopped and sautéed
INSTRUCTIONS
- Preheat oven to 350°F.
- Chop mushrooms and cherry tomatoes. In a medium-high pan, drizzle with olive oil and sauté the mushrooms and tomatoes.
- In another medium-high pan, drizzle with olive oil and cook the spinach.
- In a large bowl, whisk the eggs. Once the spinach and vegetables are cooked, add them to the egg yolk.
- Add salt and pepper to the mixture.
- Lightly grease the 9×9 glass baking dish with butter. Add the egg mixture to the baking dish and place in oven. Let cook for 30 minutes.
- When it’s done, let cool for 10 minutes. Then cut into the quiche and enjoy with coffee or juice!
