Flippin’ Good Flapjacks


To preface these flippin’ good flapjacks, I’m a person who believes less is more — and that applies to the pancakes I make.

I’ve tried adding blueberries in my pancake batter, as well as adding them on top of the stack, but I’ve come to terms with my preference for simplicity. And this is just that. It’s a straightforward go-to recipe that will guarantee you a fluffy stack of pancakes.

I only add icing sugar and, of course, maple syrup to top off my stack.


Prep time | 5 mins.
Cook time | 20 mins.
Yields | 8-10 pancakes

INGREDIENTS 

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 2 cups milk 
  • 1 egg 
  • 3 tbsp butter, melted
  • Powdered sugar, for dusting
  • Maple syrup, for topping
  • Assortment of berries (optional)

INSTRUCTIONS

  1. In a large bowl, sift together the flour, baking powder and salt.
  2. Make a well in the centre and pour in the milk, egg and melted butter. Mix until until smooth.
  3. Spray a large pan with non-stick spray and heat pan low-medium heat. Use a ladle to scoop the batter out of the bowl (fill about 3/4 of the ladle) and pour gently into the centre of the pan. Brown on both sides.
  4. Add icing sugar to your stack of flapjacks and, if you’d like, an assortment of berries.
  5. Top with maple syrup and enjoy!
