My friend recently baked some fresh oatmeal chocolate chip cookies for me, and I forgot how much I enjoy this easy recipe.
It’s just like baking classic chocolate chip cookies, but the oatmeal offers a tasty addition that perfectly rounds out the treat. Plus, it takes no time at all.
Whether you plan ahead or you have a spontaneous craving to bake, these cookies take less than 15 minutes to prep and only 10 minutes in the oven. The only thing you have to factor in is the 1-hour chill time in the fridge.

INGREDIENTS
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, room temperature
- 1/3 cup granulated sugar
- 1/3 cup brown sugar
- 2 tsp vanilla extract
- 1 large egg
- 3/4 cup rolled oats
- 3/4 cup semi-sweet chocolate chips
INSTRUCTIONS
- In a medium bowl, whisk the flour and baking soda.
- Add the butter with both sugars and beat with a hand mixer on medium speed until fluffy.
- Reduce speed and add the salt, vanilla, and eggs. Beat until well combined.
- Stir in the oats and chocolate chips.
- Chill the dough for at least one hour or overnight.
- Preheat the oven to 375°F.
- Use an ice cream scooper (or spoon) to create tablespoon-size balls of dough and place them a couple inches apart on the baking sheet lined with parchment paper.
- Bake for about 8-10 minutes, or until the cookies are golden brown.
- Let cool on a wire rack for at least 10 minutes. Enjoy with coffee, tea, or a glass of cold milk!
