Oatmeal Chocolate Chip Cookies


My friend recently baked some fresh oatmeal chocolate chip cookies for me, and I forgot how much I enjoy this easy recipe.

It’s just like baking classic chocolate chip cookies, but the oatmeal offers a tasty addition that perfectly rounds out the treat. Plus, it takes no time at all.

Whether you plan ahead or you have a spontaneous craving to bake, these cookies take less than 15 minutes to prep and only 10 minutes in the oven. The only thing you have to factor in is the 1-hour chill time in the fridge.

INGREDIENTS

  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, room temperature
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 2 tsp vanilla extract
  • 1 large egg
  • 3/4 cup rolled oats
  • 3/4 cup semi-sweet chocolate chips

INSTRUCTIONS

  1. In a medium bowl, whisk the flour and baking soda.
  2. Add the butter with both sugars and beat with a hand mixer on medium speed until fluffy.
  3. Reduce speed and add the salt, vanilla, and eggs. Beat until well combined.
  4. Stir in the oats and chocolate chips.
  5. Chill the dough for at least one hour or overnight.
  6. Preheat the oven to 375°F.
  7. Use an ice cream scooper (or spoon) to create tablespoon-size balls of dough and place them a couple inches apart on the baking sheet lined with parchment paper.
  8. Bake for about 8-10 minutes, or until the cookies are golden brown.
  9. Let cool on a wire rack for at least 10 minutes. Enjoy with coffee, tea, or a glass of cold milk!
