Chocolate Peanut Butter Brownies


If you’re a peanut butter cup fanatic, then get yourself ready for this one.

One of my all-time favourite desserts is a brownie, in any shape or size. So when I discovered this recipe, I knew I was in for a euphoric delight.

The only additional time you have to take into consideration is for chilling the peanut butter in the freezer for 1 hour. Other than that, this recipe is as simple as it gets.

First layer brownie mix, second layer of frozen peanut butter, third layer brownie mix. Need I say more?

Bake time | 30 mins.
Cooling time | 1 hour

INGREDIENTS 

  • 1 1/4 cups peanut butter, melted 
  • 10 tbsp butter, melted 
  • 114 grams of semisweet chocolate chips, melted 
  • 1 cup sugar
  • 2 eggs
  • 1 egg yolk 
  • 1 tsp vanilla extract 
  • 1/2 cup flour
  • 1/4 cup cocoa powder 
  • 1/4 tsp salt 

INSTRUCTIONS 

  1. Melt the peanut butter in the microwave. Put a piece of parchment paper on the baking pan (the parchment paper should hang over the pan so you can lift it out later). 
  2. Add the peanut butter to the parchment paper in the pan and leave it in the freezer for 1 hour.
  3. Set oven to 350° F.
  4. Melt butter and chocolate together in the microwave. Time it for 30 second intervals and stir it every 30 seconds until they’re completely melted.
  5. Add sugar to the mixture and whisk until well combined. Let the mixture cool.
  6. Add in 1 egg and mix until the egg is completely combined in the mixture. Add the second egg and stir completely until it’s well combined. 
  7. Add the egg yolk and stir until it’s well combined. 
  8. Use a spatula to stir in the flour, cocoa powder and salt until well combined. 
  9. Take the peanut butter out of the freezer (if it’s been at least 1 hour) and life the frozen peanut butter out of the pan by the parchment paper.
  10. Add half of the brownie batter to the baking pan. Add the frozen peanut butter on top of the brownie batter. Add the remaining batter on top of the frozen peanut butter.
  11. Bake for 30 minutes or until it’s cooked all the way through. When it’s done, let it cool for 30 minutes in the pan. Then, remove it all from the pan (don’t cut into it) and let it cool for another 30 minutes before slicing.
